The Secret Life of Droplets: A Tale of Food, Formulation, and Science
Ever wondered how X-rays can help to improve the food and personal care products we use every day? At synchrotron facilities like MAX IV and ESRF, powerful X-rays allow us to see deep inside tiny structures of emulsions found in food (Mayonnaise, butter, milk). By understanding how these structures work, we can design better, more stable products sustainably.
Designing built environments for better health and well-being
Neurourbanism is an emerging field of research that can guide the design of healthier, more attractive urban spaces that encourage walking. By introducing neuroscientific and psychological methods, this research explores how built environments can influence our emotions, perception of time and brain activation.
The Invisible Health Workers
Worldwide, millions of ‘community health workers’ provide life-saving treatments at the doorsteps of remote populations. These workers are mostly unpaid women, and the global community is increasingly demanding countries ‘professionalize’ them as formal workers with salaries and benefits such as pensions. I present some of the tensions in the ‘professionalization’ debate using data from my PhD.
